Ok, a bit more investigation shows that on PostgreSQL, under certain 
conditions, it *is* possible to calculate the number of bytes required 
for a string column encoded in UTF-8.

However, it is fragile, it depends on the data in each row, it requires 
scanning the entire data set before generating the headers, and it 
probably wouldn't work on other database platforms.
